A well-made cafecito has a sweet crema floating over strong espresso coffee. Crema has nothing to do with cream. It’s the foam made from sugar that’s been thoroughly beaten with a splash of coffee in the coffee pot.

Cuban coffee recipe

1 – Fill a stovetop espresso maker with water and coffee and make sure to pack down the coffee. Place the espresso maker over moderate heat.

2 – While the coffee is brewing, fill a container with 2 to 3 tablespoon of sugar. As soon as the coffee starts to fill the reservoir, pour spoon full of coffee over the sugar and return the espresso maker to the heat.

3 – Beat the sugar and espresso together with a spoon until the mixture turns a pale beige color and most of the sugar begins to dissolve.

4 – Slowly pour the rest of the coffee over the creamed sugar while stirring to make sure all the sugar dissolves. You will see a thin layer of sugar foam (crema) begin to float on top of the coffee. Pour the coffee into cups and serve while hot.

5 – This recipe is written for the typical 6-cup version. You can adjust the amount of coffee and sugar used to accommodate your taste. The coffee’s sweetness is up to you.
